During the sake of production, the liquid extracted from the unrefined sake is used as a well-known alcoholic beverage. The remaining residue becomes the sakekasu (sake-lees).
Nutrients leftover from the yeast remains in the Sakekasu, including carbohydrates, protein, fibers, vitamin B & more.
